Sauce Pois Rouge (red peas soup)

Ingredients
1 bag of small red beans
1 scallion, chopped
1 shallot, diced
1 garlic clove, crushed
2 Maggi cubes
1 tsp of Adobo seasoning salt
1 tsp of black pepper
2 tsp of dried thyme
1 tsp of parsley
1 tsp of oil
   
Description
In a large pot, bring water and peas to a boil. Let it cook for 1 1/2 hours, until peas are tender.
Drain the peas and set aside the reserved liquid. Using a food processor, add the peas, 2 cups of reserved liquid, 4 garlic cloves; puree until smooth.

Heat oil in a sauce pan over medium-high heat; saute shallot and scallions for 3-5 minutes.

Pour the peas soup into a large pot over medium heat. Season to taste with Maggie cubes, pepper, and seasoning powder. Stir in the thyme, parsley, scallions, and shallot. Remove from heat. Serve with white rice.
